I love these. Crumpets or flapjacks, or you might even call them pancakes, are easy to make. Crumpets are the perfect breakfast treat to give on Mother's Day, as anybody can make them.
Ingredients:
- 250ml (1 cup) plain flour
- 2 Eggs
- 125ml Milk
- 30ml melted butter
- Pinch of salt
- 30ml brown sugar
- 1 tsp baking powder
Instructions:
- In a large bowl, mix together the flour, salt, baking powder, and sugar.
- Make a well in the center of the dry ingredients.
- In a separate jug, mix the eggs, milk, and melted butter.
- Pour the egg mixture into the bowl with the dry ingredients.
- Blend until the mixture has a good consistency, which is a little thick and not too runny. The mixture should pour nicely, but run all over the place.
- Heat a non-stick pan or griddle over medium heat. If you're using crumpet rings, lightly grease them.
- Spoon the batter into the pan, making sure they're not touching. The size you want depends on you.
- Cook for 3-4 minutes, or until bubbles appear on the surface of the batter and the edges start to set.
